Mrs. Fifield's Meatballs

Mrs. Fifield was an Italian lady and family friend of my wife for years. Sadly, she passed away a few years ago. She made some of the best Italian food I've ever had in my entire life. So while she was still with us, I had her share a few of her recipes. Enjoy!

Here's what you need:

  • 2 Lbs Ground Chuck
  • About 1/2 C Bread Crumbs
  • 2 Eggs
  • 1/4 C Grated Parmesan or Romano Cheese
  • 3 Cloves Chopped Garlic
  • Salt & Pepper

Directions:

Mix up the above. If too dry, add a touch of water.

Wet your hands, then make the balls.

Brown them on all sides but don't cook them all the way through.

Add them to sauce, then cook them rest of the way.
