"Danger Knows No Favorites" Bock

This recipe is for a German-style dark, bock beer, kind of like Beck's. The recipe is from Charlie Papazian's homebrew book with a few modifications by yours truly.


Ingredients

Specialty Malts: Crystal Malt 40L 3/4 lb
  Black Patent Malt 1/4 lb
  Chocolate Malt 1/4 lb
Malt Extract: American Classic Dark 6.6 lb
Boiling Hops: Hallertauer Pellets 1 1/2 oz
Finishing Hops: Hallertauer Pellets 1/2 oz
  Cascade Pellets 1/4 oz
Aromatic Hops: Cascade Pellets 3/4 oz
Brewing Licorice:   1 inch
Irish Moss   1 tsp
Yeast: Whitbread Lager 14 g



Basic Recipe

About two hours before you plan on making the beer, make a yeast starter. In a small pot, bring 2-3 cups of water to a boil. Dissolve in about one tablespoon of malt extract and boil for a minute or two. Put on the lid, remove it from the heat, and let it cool. When room temparature, put in a mason jar and add the yeast. By the time you're done making the beer, your yeast should be very bubbly and active. When recipe calls for you to pitch the yeast, pour the contents of the jar into the fermenter. This gives the yeast a head start, which reduces the probability of any undesireable organisms contaminating your beer.

Crush crystal, chocolate, and black patent malts and add to 1.5 GAL water. Slowly bring to a boil. Sparge grains into boiling pot.

Add malt extract, licorice (shredded), and boiling hops. Boil for 45 minutes.

Add Irish Moss. Boil for 10 more minutes.

Add Finishing Hops. Boil for 5 more minutes.

Cool, then sparge into fermenter. Pitch yeast when about 80 degrees.
